Pancreas cancer is hard to detect in the early stages, however, it is the most deadly because only 1% of the diagnosed patients in the UK have survived it for ten years or more. The survival rates in the USA are not any better. This is due to the early warning signs being mistaken for everyday health complaints. By the time doctors diagnose it, it is almost impossible to remove the cells completely.
What is the greatest culprit for this disease?
Specialists believed it to be excess weight, pancreatitis, diabetes, and smoking for a longer period of time, but the newest research found out that meat products may also be the blame. The study was published in BMC medicine and it discovered that high consumption of red meat is related to higher all-cause mortality. This includes death caused by cancer. The greatest link to cancer and cardiovascular disease has processed meat. Poultry had little to no association.
This is not the first study which showed the link.
The risks of getting pancreatic cancer increases with every 2 strips of bacon you eat
There was a study which was founded by the Swedish Cancer Foundation and it examined 11 studies and case reports on more than 6,000 pancreatic cancer patients. They discovered that 50 grams of processed meat (1 sausage or 2 strips of bacon) consumed on daily basis increase the risk of this cancer type. If one eats 150 grams of processed meat on daily basis makes them 57% more likely to suffer from this disease. Researchers are still investigating this as they are not so sure what the mechanisms are to blame. Nitrates and nitrites have often come under fire because they are potential to be toxic.
What are nitrates?
Those are compounds which are found in the soil. Water, and air, acting like a preservative and color enhancer in the products made from meat. Our bodies use them to kill harmful bacteria in the digestive tract, facilitate signaling of cells, dilate blood vessels, and increase energy. However, when they are found in meat and exposed to high temperature from cooking, they turn into nitrosamines. This appears when the right amino acids are present. These are carcinogenic compounds which can be found in cured meats, beer, some cheeses, non-fat dry milk, and processed fish. Those foods are actually related to increased risks of stomach, esophageal, and bladder cancers. There is another popular nitrate-full food and that is hot dog. It is connected to 700% increased risk of childhood leukemia.
Consume foods that are packed with vitamin C
If you want to avoid carcinogenic compounds you have to get rid of processed meats and dairy products, minimizing the exposure to nitrosamines. You can start consuming foods rich in vitamin C during nitrate-rich meals to prevent nitrosamine from forming. Moreover, you can swap bacon for salted pork belly, kept frozen and heated on low temperature slowly. Ask your local butcher to give you sausages that are free from nitrates.
